HOT CHICKEN OR TURKEY SALAD 
2 c. cooked instant rice
2 c. diced, cooked chicken or turkey
4 hard-boiled eggs, diced
2 tbsp. lemon juice
1 tsp. salt
1 1/2 c. diced celery
1 can water chestnuts, drained & sliced
1/2 c. mayonnaise
1 can cream of mushroom soup
1 sm. onion, chopped
1 c. cheddar cheese, grated
Crushed potato chips

Mix all but 1/2 cup cheese and potato chips. Refrigerate overnight. Sprinkle with remaining cheese and crushed chips. Bake 25 minutes at 350 degrees.
