COCO-NUTTERS
4 squares unsweetened chocolate
2 c. condensed milk
1/4 tsp. salt
8 oz. shredded coconut
1 1/3 c. chopped walnuts (or another kind of unsalted nut if you prefer)
1 tsp. vanilla extract

1. Set the oven to 375 degrees.

2. Tear off enough waxed paper to cover a cookie sheet. Grease the cookie sheet and the waxed paper. Put the waxed paper over the cookie sheet, greased side up.

3. Drop the chocolate in the top of a double boiler and melt it over hot, BUT NOT BOILING water. (Stove at lowest setting.) Stir occasionally with a long spoon.

4. When the chocolate is melted, turn off the stove and CAREFULLY life off the top of the double boiler. Let chocolate cool for a minutes.

5. Add the milk, salt, coconut, nuts, vanilla to the chocolate in the top of the double boiler. Stir well.

6. Drop the mixture, by teaspoonfuls, onto the prepared cookie sheet. Use a regular teaspoon, not a measuring spoon. Leave some room around each cookie. They will spread out.

7. Bake about 8 minutes.

8. Let the cookies cool for 5-10 minutes on the waxed paper before you try to remove them. The cookies will be a little sticky. Arrange them on a plate when cool.

Makes about 40 cookies.
