BONBONS DE COCO 
3 c. shredded coconut
1 grated lemon rind
1 c. sugar
1/2 c. cream
1 tsp. vanilla
1 tsp. cinnamon

Mix all ingredients. Pour them into a saucepan. Cook over low heat until mixture is brown and the sugar is melted; stir the whole time.

Drop in small mounds on cookie sheet. Dry in slightly warm oven (200 degrees) until firm but not hard. This takes about 1 hour or a little longer. Recipe makes about 48 bonbons. (It depends on the oven, some ovens get hotter than others.)
