FETTUCCINE WITH MUSHROOMS AND
ASPARAGUS
 
2 tbsp. olive oil
2 cloves garlic, chopped
1 med. onion, chopped
6 lg. mushrooms, sliced
1 c. asparagus, chopped
Pinch chili pepper
4 oz. water
1 tomato, chopped
2 tbsp. tomato paste
8 oz. fettuccine, cooked & drained
Grated Parmesan cheese

Heat the oil in a fry pan and saute the garlic, onion, mushrooms, chili pepper and asparagus until the asparagus has softened. Add the water, tomato, tomato paste and simmer for 15 minutes. Toss the fettuccine with butter. Serve with grated cheese sprinkled on top. Serves 4.
