ENCHILADAS 
1 lb. hamburger meat, drained
Diced onion
1 can pinto or ranch style beans
1 can enchilada sauce
1 can Ro-Tel tomatoes; optional
1 can green chilies
2 c. cheddar cheese, shredded
1 pkg. flour or corn tortillas, whichever you prefer

Spoon some hamburger, onion, and beans into each tortilla and roll up. Put in baking pan and pour sauce, tomatoes, and chilies over tortillas.

Sprinkle cheese over top and bake 30 minutes in 350 degree oven or until cheese melts good.
