EASY REFRIGERATOR PICKLES | |
6 c. thinly sliced unpeeled cucumber (about 2 lbs.) 2 c. thinly sliced onion 1 1/2 c. vinegar 1 c. sugar 1/2 tsp. salt 1/2 tsp. mustard seeds 1/2 tsp. celery seeds 1/2 tsp. ground turmeric Place half of cucumbers in a large glass bowl, then half of the onion. Add the rest of the cucumbers, then the rest of the onions. Combine vinegar and remaining ingredients in saucepan. Stir well and bring to a boil. Boil for 1 minute, then pour over cucumber and onion. Let stand until cool. Cover and let marinate in refrigerator for 4 days before putting in jars to use. Makes 7 cups. |
