ITALIAN SPUMONE 
Fills 9 x 9 x 3 inch pan. Spray pan with non-sticking oil.

BOTTOM LAYER:

1 pt. whipping cream
1/2 c. confectioners' sugar
8-10 strawberries (fresh or thawed)
Strawberry flavoring to taste
Red food coloring

Combine whipping cream and sugar. Whip until forms peaks. While blending add flavoring and food coloring. Fold in mashed strawberries. Put in bottom of pan and freeze.

CHOCOLATE LAYER:

1 pt. whipping cream
1/2 c. instant cocoa (dry)

Combine whipping cream and cocoa. Whip until form peaks. Put on top of strawberry layer and freeze.

PISTACHIO LAYER:

1/2 gal. French vanilla ice cream
Pistachio flavoring to taste
Green food coloring
1/2 c. finely chopped pistachio nuts (if desired)

Soften ice cream. Add flavoring, food coloring and nuts. Put on top of chocolate layer and freeze.

TOP LAYER:

1/2 gal. French vanilla ice cream
Rum flavoring to taste
9 maraschino cherries, drained
