HALUPKI (CABBAGE ROLLS)
3 lbs. ground meat
1/2 c. raw rice (or parboiled), rinsed
1 onion, chopped and sauteed
1 can tomato soup
Salt and pepper
1 head of cabbage, washed
Tomato sauce

Mix ground meat, rice, onion, tomato soup, salt and pepper. Place cabbage into a kettle of boiling water and remove leaves as they loosen. When cool, fill leaves with a heaping spoonful (or more) of ground meat mixture. Fold side ends in and roll up. Place bottom- side down in roaster. Cover with tomato sauce and some water. (You can also use tomato soup, puree, or diluted paste). After rolls come to a boil, cook covered for 1 hour at 350 degrees. (NOTE: If using raw rice, let rolls cook a little longer).

I put leftover chopped cabbage on bottom of roaster. I covered the rolls with sauerkraut and used a tomato juice instead of soup. Great!!!
