OATMEAL HEALTH COOKIES 
1 c. butter
1 1/4 c. brown sugar
2 eggs
2 tsp. vanilla
1 1/3 c. flour (unbleached)
1 tsp. salt
1 tsp. baking soda
3 c. quick oats
1/2 c. wheat germ
Optional: 1/2 cup raisins, 1/2 cup chopped nuts or dates

Cream the butter and brown sugar together. Add eggs and vanilla. Mix well. Add dry ingredients and mix well. Add raisins, nuts or dates. Bake at 375 degrees for 8 to 10 minutes on greased baking sheet. Drop by tablespoon on baking sheet. About 3 dozen.
