SUMMER SAUSAGE 
5 lb. hamburger
5 rounded tsp. Morton's tender quick salt
3 tsp. garlic salt
4 tsp. mustard seed
5 tsp. coarse black pepper
6 tsp. hickory smoked salt
1 tbsp. Accent
1 tsp. Liquid Smoke
1/2 tsp. cayenne pepper

Combine all ingredients. The seasonings should be cut in with a fork before using hands to totally mix. When first mixing with hands, the mixture will feel grainy. Continue mixing until it feels smooth and looks thoroughly mixed. Refrigerate and deep covered. Mix with hands once a day for 3 days.

On the 4th day, form into rolls the size of Ritz crackers (makes approximately 8 (6 inch rolls). Place on shallow pan in 175 degree oven for 8 hours. Turn once. May be served warm on the day prepared or wrapped in foil and depth in crisper for serving cold. Serves a crowd.
