This is more of a to-your-taste recipe so try it, modify it to your tastes and enjoy. I'm not a fish person but I make/eat this twice a month it's really amazing! 4 salmon fillets 3 cups brown sugar 1 cup (2 sticks) butter 2 to 4 tbsp. Cajun seasoning (Tony's) Mix brown sugar and Cajun seasoning in a bowl (add Cajun seasoning to taste - more for more spicy, less for less so). Bread your salmon in brown sugar mixture - pack it on thick. Melt butter in skillet. When you cook your salmon you want the mixture to almost caramelize in the butter so you can sprinkle more of the brown sugar mixture on while you are cooking or add more butter depending on how much sauce you want on your salmon.
