1 lb. ground beef 3 lg. onions, sliced or chopped in lg. pieces 1 lg. green pepper, chopped 1 (1 lb.) can tomatoes, chopped 1/2 c. uncooked regular rice 1-2 tsp. chili powder 2 tsp. salt 1/2 tsp. pepper Heat oven to 350 degrees. In larger skillet cook and stir ground beef until light brown; drain off fat. Add onions and green pepper, cook and stir until onions are tender. Stir in tomatoes, rice, chili powder, salt and pepper. Heat thoroughly. Pour into ungreased 2 quart casserole. Cover and bake 1 hour. This can also be cooked on top of the stove if you cover the skillet and use very low heat. If it dries out too much, add a little water or a 6 ounce can tomato juice. |
