SALMON STEAKS WITH GARLIC 
4 salmon steaks, cut 1" thick & weighing about 3/4 lb.
1/4 c. butter, melted
Black pepper
Salt
2 lemons, quartered

1. Preheat broiler. Dry salmon with paper towels.

2. Butter both sides of fish with pastry brush and arrange on broiler pan rack and broil 3-4 inches from heat for 3 minutes each side. Baste with remaining butter, salt and pepper and broil another 3 minutes. Turn, baste, and broil another 5-8 minutes, until firm to the touch. Transfer to serving plate and garnish with lemon quarters. Spread with garlic and herb butter.

GARLIC & HERB BUTTER:

8 tbsp. butter, softened
1 tsp. garlic, minced
2 tbsp. fresh parsley, finely chopped
1 tbsp. green onion, finely chopped
Salt
Pepper
