HELEN TRAUBEL CHICKEN | |
2 (3 lb.) fryers, cut up 1/2 c. butter 4 c. sliced carrots 2 c. sliced celery 16 oz. fresh mushrooms 2 tbsp. parsley 2 tbsp. thyme 2 tbsp. marjoram 2 bay leaves 1 tsp. Worcestershire sauce Dip chicken in flour, brown in butter. Put chicken in broiler pan. Saute carrots, celery and mushrooms. Stir in parsley, thyme, marjoram, bay leaves and Worcestershire sauce. Simmer 5 minutes and pour over chicken (do not add any liquid). Cover pan and bake 2 hours at 300 degrees. Can be prepared the day before and baked the next day. Can cook longer if folks aren't ready to eat. Can cook at a higher temperature for a shorter time if needed. Indestructible! 8 to 10 servings. |
