SHALLOT AND TARRAGON SALAD
DRESSING
 
1 1/2 c. olive oil
1/2 c. red wine vinegar
2 tsp. dried tarragon
3 shallots, minced
1 tbsp. Dijon mustard
Salt and pepper to taste

Combine all ingredients in a screw-top jar and shake. Pour over mixed salad. Yields: 2 cups.
