SHRIMP JAMBALAYA 
1 clove garlic
1 med. onion
3/4 lb. pre-cooked ham
3 tbsp. olive oil
1 c. brown rice
20 oz. tomatoes
1 (12 oz.) can mushrooms with liquid
1 lb. frozen shrimp
Green/red/yellow bell pepper strips
1/2 tbsp. salt
Pinch each of black pepper, red pepper and cayenne pepper

Best prepared in pressure cooker. Stir fry garlic and onion in oil until transparent. Add ham diced and uncooked brown rice. Fry until golden. Drain tomatoes and slice. Add mushrooms with liquid. Mix in all spices and seasonings. Mix thoroughly in cooker all ingredients except shrimp and pepper slices. Add these items on top of mixture. Cook on low pressure for 5 minutes. Cool immediately. Mix once and set for 5 minutes.
