SPINACH PARMESAN 
10 oz. pkg. spinach, cooked & drained
1 tbsp. grated onion
2 eggs
1/2 c. sour cream
1/3 c. Parmesan cheese
2 tbsp. butter
1 tbsp. flour
1-2 dashes Tabasco

Preheat oven to 350 degrees. Melt butter in saucepan and blend in flour. In a bowl combine eggs, sour cream, Parmesan and flour mixture until smooth. Add spinach, onion and Tabasco to mixture until well blended. Pour into buttered casserole dish and bake in 350 degree oven for 20 to 25 minutes or until center is firm.
