CHOCOLATE PIE 
1/3 c. sifted flour or 1/4 c. cornstarch
1 c. sugar
1/4 tsp. salt
2 c. scalded milk (to hot milk, add 2 squares chocolate)
3 slightly beaten egg yolks (save whites for meringue)
2 tbsp. butter
1/2 tsp. vanilla
1 baked deep 9-inch pie shell

FILLING: Mix flour (or cornstarch), sugar and salt, gradually add hot milk (with chocolate squares). Cook over medium heat, stirring constantly, until mixture thickens and boils. Cook 2 minutes. Remove from heat. Add small amount of cooked mixture to egg yolks. Stir this back into hot mixture, cook 1 minute, stirring constantly. Add butter and vanilla, cool, pour into baked pie shell.

MERINGUE: Cover pie with meringue (made of 3 egg whites and 6 tablespoons sugar, dash of cream of tartar. Beat with mixer until egg whites are stiff.) Bake in 350 degree oven for 12 to 15 minutes. Makes 1 pie.
