3 c. sugar 1/2 c. light corn syrup 1/2 c. cold water 2 egg whites, beaten stiff 1 tsp. vanilla Food coloring (if making into shapes) Nuts (if leaving white) This is easy to do but a lot easier with help. Place sugar, syrup, and water in heavy saucepan over low heat. Stir until sugar is dissolved as it cooks. Cover pan and cook until syrup forms a soft ball when tested in cold water. Pour half of syrup SLOWLY into egg whites. Stir gently as you pour. Put remaining half syrup back on stove and cook until it forms a hard ball and cracks when hit against side of glass. Stir egg whites as you wait for remaining mix to cook. Pour thick syrup slowly into egg whites, stirring all the time. Beat until it can be dropped from a spoon onto wax paper. Add vanilla and nuts. Pour into buttered pan and slice for fudge. To make shapes, pour into small containers that can be covered. Add food coloring. Coat hands with powdered sugar and shape into ducks, rabbits, balls, bats, flowers, etc. White shapes can be painted with food coloring. |
