4 small smoked turkey wings 4 c. water 1/2 lb. pearl onions (whole) 2 to 3 lb. fresh collards 1/4 c. sugar (optional) 1 tsp. freshly ground pepper 1 tsp. garlic powder 1 tsp. crushed red pepper flakes 1 tbsp. salt 1/2 c. bacon pieces drippings from 6 slices fried bacon Put turkey wings in large pressure cooker, along with some spices from the recipe and 3 to 4 cups of water. Bring to a boil until spigot pops, 5 to 10 minutes. Remove from heat. There should be 2 to 3 cups of liquid. Wash collards thoroughly and cut away thick stems and chop coarsely. Put chopped greens in pressure cooker in turkey liquid (leave in turkey) along with pearl onions, sugar, salt, both peppers and garlic powder. Cook 5 to 10 minutes after steam starts rocking the spigot. Remove from heat. Taste and adjust seasoning. Pour bacon pieces and drippings over top. Stir in and serve. |
