CONTINENTAL ZUCCHINI 
3 c. cubed zucchini (4 sm.)
1 (12 oz.) can corn, drained
1 (2 oz.) jar chopped pimento, drained
2 med. cloves garlic, crushed
2 tbsp. oil
1 tsp. salt
1/4 tsp. pepper
1/2 c. shredded Mozzarella cheese (2 oz.)

Mix zucchini, corn, pimiento, garlic, oil, salt and pepper in skillet. Cover and cook over medium heat, stirring occasionally until zucchini is crisp-tender, about 10 minutes. Stir in cheese, heat through. Serves 6, 120 calories per serving.
