BRAN MUFFINS 
1 c. Miller's bran or oat bran
3/4 c. unbleached white flour
3/4 tsp. salt
1/4 c. brown sugar, packed
1/2 tsp. baking soda
3/4 c. buttermilk
1 egg
1/4 c. vegetable oil

Using a medium-sized bowl, mix dry ingredients. In separate smaller bowl combine buttermilk, egg and oil and add to dry mixture. Mix only long enough to mix dry ingredients. Fill greased muffin cups about 3/4 full. Bake at 425 degrees for about 20 minutes. Loosen or remove from tins and keep warm until ready to serve. Makes approximately 12 muffins.

Note: Raisins, blueberries, or cut up pieces of fruit may be added to batter just before filling muffin tins, folding in gently.
