CARROT AND RAISIN SALAD 
3 1/4 lb. carrots, fresh, shredded
3 c. raisins
1 1/2 c. mayonnaise
2 tbsp. lemon juice
1/2 tsp. salt
2 tbsp. sugar

Combine all ingredients. Mix well and chill. Protein 1.1 gm; CHO 20.8 gm; Fat 10.7 gm; Kcal 177; Sodium 143 mg; Dietary fiber 3.2 gm. 1/2 cup per serving. 25 servings.
