ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. salad oil
1 tsp. vanilla
3 c. flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 c. walnuts
1 c. raisins or currants
2 c. coarsely grated zucchini
8 oz. drained crushed pineapple

Beat eggs, add sugar, oil, vanilla, beat until thick. Add dry ingredients and mix well. Add raisins or currants, walnuts, zucchini and crushed pineapple. Blend together.

Bake at 350°F for 1 hour in 2 greased and floured loaf pans. Test for doneness with a toothpick.
