SAUSAGE AND SALSA CON QUESO 
1/2 lb. mild Italian sausage
1 red bell pepper, diced
1 sm. onion, chopped
1/2 c. thick and chunky salsa
1 lb. pasteurized process cheese spread, cubed
1 tsp. ground cumin
2 tbsp. chopped fresh cilantro (optional)

Cook sausage, bell pepper and onion in skillet until sausage is brown and crumbly, breaking up sausage into very small pieces with wooden spoon. Drain. Add remaining ingredients, cook over low heat, stirring frequently; until cheese is melted. Put in serving bowl and if you like sprinkle with cilantro. Serve with vegetables or chips. Makes 3 3/4 cups.
