TUNA MUFFINS 
2 c. cooked rice
1 c. shredded Cheddar
6 1/2 oz. can tuna
3/4 c. sliced black olives
4 tbsp. chopped onion
1 tbsp. parsley
1 tsp. seasoned salt
3 beaten eggs
4 tbsp. milk

BUTTER SAUCE:

1/4 c. melted butter
1 tbsp. lemon juice
1/2 tsp. seasoned salt
1/2 tsp. parsley

Combine rice, cheese, tuna, olives, onion, parsley and seasoning salt. Stir together eggs and milk; add to rice mixture.

Spray muffin tins with no-stick cooking spray and divide mixture between tins. Bake at 375 degrees for 15 minutes or until lightly browned. Or, bake in a cake pan and slice in squares. Serve topped with warm butter sauce. (Also very good made with chicken.)
