CHOCOLATE ZUCCHINI CAKE 
2 1/2 c. flour
1/2 c. cocoa
2 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 c. walnuts, chopped
3/4 c. oil
2 c. sugar
3 eggs
2 tsp. vanilla
2 tsp. orange peel
2 c. coarsely shredded zucchini
1/2 c. milk

Combine flour, cocoa, baking powder and baking soda, salt and cinnamon. Set aside. In separate bowl, beat oil and sugar until smooth. Add eggs, one at a time, beating well after each addition. Add with spoon vanilla, orange peel and zucchini. Alternately mix in milk and dry ingredients including nuts in last addition.

Pour into greased and floured 10-inch tube pan. Bake at 350 degrees 1 hour. Turn on wire rack to cool 15 minutes.

Then glaze with 2 cups powdered sugar, 3 tablespoons milk and 1 teaspoon vanilla. Beat until smooth.
