CHOCOLATE ZUCCHINI CAKE | |
1 stick plus 1 tbsp. butter 2 c. sugar 3 eggs 3 sq. bitter chocolate, melted 2 tsp. vanilla 2 tsp. grated orange rind 1/2 c. milk 2 c. coarsely grated zucchini 2 1/2 c. flour 1 1/2 tsp. baking soda 2 1/2 tsp. baking powder 1 tsp. salt 1 tsp. cinnamon In a large bowl, cream together the butter and sugar. Beat in the eggs, then the melted chocolate, vanilla, orange rind, and milk. Stir in the zucchini. In another bowl, stir together all remaining ingredients and beat these into the zucchini mixture. Turn the batter into a greased and floured 10 inch tube or bundt pan. Bake in a 350 degree oven about 1 hour or until toothpick comes out clean. Cool on rack before removing from pan. |
