COLD PASTA PRIMAVERA 
1 lb. linguine
1 zucchini
1 summer squash
1 broccoli
2 carrots
Green pepper
6 mushrooms
1 can black olives
Green peas, frozen
Red pepper
Hand full of capers
16 oz. can tomatoes, chopped
6 - 8 basil leaves, fresh
1/2 c. olive oil
1/4 c. lemon juice, fresh
Salt and pepper

Note: you can use any vegetables you want and omit those you don't like!!! Cook linguine al dente and cool in ice water. Drain thoroughly and top with 1 tablespoon oil and can of tomatoes. Set aside. Chop vegetables or slice according to attractiveness. You can blanche very slightly or leave the vegetables raw according to your liking. Make dressing of oil, lemon, basil and salt and pepper. Combine all ingredients and let marinate at least 4 hours.
