CRACKLING CORN BREAD 
1 1/2 c. cornmeal
1/4 c. flour
1 tsp. baking soda
1 tsp. salt
2 c. buttermilk
1 egg
1 c. finely cut cracklings or crumbled crisp bacon

Sift together dry ingredients. Add buttermilk and egg. Stir until well mixed. Season cracklings with additional salt to taste and fold in last. Pour batter into very hot, well greased iron skillet or muffin pan (12 muffins). Bake at 450 degrees for 25 minutes or until done.
