QUICK AND EASY BROCCOLI SOUP 
1 head broccoli flowerets, cut and chopped
Minced onion
1 can clear chicken broth
1 can (sm.) mushroom pieces, chopped
2 pts. half and half
1 c. shredded Cheddar cheese
Instant potato granules
1/2 stick butter
Salt and pepper

1. Pour chicken broth and chopped mushrooms into crock pot or saucepan.

2. Put chopped broccoli flowerets and minced onion in microwave. Cook 3 minutes.

3. Add cooked broccoli and onion to broth.

4. Slowly add half and half to broth mixture.

5. Add cheese, butter, salt and pepper. Stir until cheese and butter melt. Add potato buds until desired consistency is reached.

Since microwave ovens vary in power, you may need to adjust your cooking time.
