FUZZY PEACH PORK | |
3 (3 oz.) pork loin slices, flattened Flour as needed 1 peach, fresh 1 oz. peach schnapps Salt and pepper as needed Thyme, rosemary, nutmeg, as needed 2 oz. pork broth 8 snow peas 1/4 pimento, julienne cut 1 oz. butter 1 pinch flour 1 oz. vegetable oil 1/2 tsp. brown sugar (optional) Dust pork slices with flour. Heat skillet with oil and saute pork slices on both sides until golden brown. Pour excess grease from skillet and season pork with spices, salt and pepper. Cut the peach in half and add it to the pan. Add the brown sugar, if used, along with the snow peas. Cook snow peas until bright green and add the peach schnapps. Cook until alcohol is burned off and add the pork broth. Reduce by half. Fan one of the peach halve for garnish. Arrange pork slices on plate and pour sauce over top. Garnish with fanned peaches. Serves: 1. (Prep and Cooking Time: 30 minutes) |
