EGGLESS CAKE 
1/2 c. butter (cholesterol free)
1 1/3 c. sugar
1 c. skim milk
2 1/2 c. flour
3 level tsp. baking powder
1 c. currants or raisins
1/2 level tsp. allspice
1/3 level tsp. salt

Beat the butter and sugar until light and creamy; add the milk, then fruit and lastly, the salt, flour, baking powder and spices sifted together. Turn into greased pan and bake in slow oven about 1 hour.
