ORANGE CANDIED YAMS 
8-10 medium size yams
1 c. brown sugar
1/4 c. butter
1/2 c. orange juice
2 tbsp. grated orange rind
sections from 1 orange

Boil yams until tender. Drain, cool, peel, and cut in half. Put sugar, butter, orange juice and grated rind in a large skillet. Heat slowly, stirring occasionally. Simmer the yams, a few at a time in the mixture over low heat until all are glazed. Remove to a baking dish. Heat the orange sections for 2-3 minutes in the skillet, arrange over yams in serving dish.
