1 c. soybeans Hot water for processing 7 c. boiling water 2 tbsp. vinegar or lemon juice Soak soybeans overnight. Rinse and grind to a fine paste in blender using hot water. In a large pan, add the ground paste to boiling water and mix thoroughly. Boil for 7 minutes. Cool; pour into cloth and squeeze out the liquid. Return liquid to pan and boil again. As soon as it starts to boil, add vinegar. Remove from heat and let sit 2 to 3 minutes until it separates. Pour coagulated milk into bag and fold edges down. Squeeze and press all the water out and pour off. Rinse in cold water. Store in water. |
