CRUSTED SWEET POTATO CASSEROLE 
3 c. cooked & drained mashed sweet potatoes
1/2 c. sugar
1/2 c. + 1/3 c. melted butter
2 beaten eggs
1 tsp. vanilla
1 c. brown sugar
1/3 c. flour
1 c. chopped pecans

Combine sweet potatoes, sugar, 1/2 cup melted butter, eggs and vanilla. Turn into a greased (with Pam) casserole. Blend brown sugar and flour; stir in 1/3 cup melted butter and nuts. Pour over sweet potatoes. Bake for 30 minutes at 375 degrees. Serves 10 to 12 persons.
