NUT GLAZED APPLE CAKE 
5 tbsp. sugar
5 tsp. cinnamon
4 c. sliced apples, thin
3 c. flour
2 c. sugar
1 tbsp. vanilla
3 tsp. baking powder
1 tsp. salt
1 c. oil
4 eggs
1/4 c. orange juice

Grease and flour tube pan. In a large bowl combine 5 tablespoons sugar with cinnamon. Add sliced apples; mix to coat. Let stand. Into a large bowl, sift flour with 2 cups sugar, baking powder and salt. Make a well and pour in oil, eggs, juice and vanilla. Beat with wooden spoon until well blended. Spoon 1/3 batter into pan. Put half of apples in next (not juice), spoon 1/3 more batter, then rest of apples; top with remaining batter.

Bake 75 minutes in a 375 degree oven or until toothpick is clean. Cool to lukewarm, turn onto plate. Drizzle with a glaze made from 2 cups confectioners' sugar and 1/4 cup fresh lemon juice. Sprinkle with nuts. Or serve plain with whipped cream.
