CANDIED YAMS 
Yams
Butter
Nutmeg
Light brown sugar

Amount of ingredient depends on the number of people being served. Boil yams until done (don't overcook) and drain in a colander until cool. Peel and slice lengthwise. Place a single layer of yams on the bottom of a baking dish. Sprinkle nutmeg on the yams.

Dot with slices of butter. Sprinkle a handful of brown sugar on top of this. Add another layer of yams, nutmeg, butter, and sugar. Three layers are good; always end with brown sugar. Bake in 350 degree oven for 1 hour. Baste halfway through with its own juices.
