ANISE COOKIES 
1 3/4 c. flour
1/2 tsp. baking powder
3 whole eggs
1 c. plus 2 tbsp. sugar
2 tsp. anise extract

Put eggs and sugar in mixer bowl and beat for 30 minutes on medium speed. After beating for 30 minutes, add flour and baking powder. Beat another 3 minutes. Add anise extract and blend in quickly. Drop by teaspoons 2 inches apart on greased and floured cookie sheets. Let set overnight on counter. Bake at 325 degrees for 10 to 12 minutes. Remove from pans immediately after removing from oven.

My mother used to make these and her's always came out with a cap in the middle (like a sunny-side fried egg) but mine just come out smooth all over. They taste the same but do yours have a cap? Just wondering how she did that. They are my favorite christmas goody. Thanks.

My mom swears it is because she whips the eggs until they are lemon colored and then swirls the batter onto the cookie sheet with a spoon. She also looks for the absolute freshest eggs she can get. This does not always work for me. Sometimes I get caps, sometimes I don't! Good luck! Hope this works better for you! Just glad to see someone else looking for the elusive cap on your anise drops!
