PASTA CARBONARA 
1 clove garlic, coarsely chopped
1/4 lb. bacon
1/4 c. chopped fresh parsley
1/4 c. dry white wine
2 tbsp. olive oil
1/4 c. grated Romano cheese
3 eggs, beaten
Salt & pepper to taste
1/4 c. water

Cook bacon in skillet, save some excess fat and drain into saucepan. Let bacon cool and drain.

In saucepan, add parsley, garlic, olive oil and wine. Simmer over medium heat 2-3 minutes then add water, salt, pepper and bacon, broken into bite-size pieces by hand. Simmer over medium heat for 5 minutes, then remove from heat. Set aside.

Meanwhile, cook pasta as directed, when you are ready to serve, add the cheese and 3 beaten eggs to the sauce, stirring well. Serve over pasta and sprinkle with grated Romano cheese. Enjoy!
