LEMON BEANS AND MUSHROOMS 
1 1/2 lb. green beans (fresh) washed and trimmed
2 tbsp. butter
1/2 lb. fresh mushrooms, cleaned and sliced
Rind and juice of 1 lemon
Salt and pepper

Place beans in boiling salted water, cook 10 minutes. Cool beans under cold running water; drain; set aside.

Heat butter in frying pan, when hot add mushroooms and cook 2 to 3 minutes over high heat. Do not stir.

Season generously with salt and pepper. Mix well. Continue cooking 2 minutes. Add beans, lemon rind and juice, cover and cook 3 minutes. Serves 4.
