GARLIC ROASTED PORK WITH HERBS 
2-2 1/2 lbs. boneless pork loin
2 garlic cloves, slivered
2-3 tsp. mixed, crumbled oregano, thyme, rosemary and sage
3-4 tsp. mustard (1/2 Dijon, 1/2 regular)
3 tbsp. olive oil

Sprinkle the slivers of garlic with the herbs, pressing to make them adhere. Make a few cuts in the surface of the meat and insert the herbs-coated garlic. Mix together the oil, mustard, and remaining herbs. Brush the meat with mustard mixture, coating thoroughly. Let rest one hour.

Roast in 350 degree oven for about 1 1/2 hours. Turn off the oven and let the meat rest for about 15 minutes before removing it. Serve hot or cold. Thinly slice and place on your favorite bread for a yummy sandwich.
