SPANISH EGGPLANT | |
4 slices bacon, crisp and save 1 green pepper, chopped 2 tsp. salt 6 (10 oz.) cans tomato paste 1 med. onion, chopped 1 cubed eggplant 1/4 tsp. pepper 1 c. water Cook, covered, 5 to 10 minutes until almost tender. Pour into 1 1/2 quart baking dish. Top with 1 cup grated cheese and bacon crumbs. Bake, uncovered, at 350 degrees for 20 to 30 minutes. |
