SPINACH PESTO 
4 cloves garlic
10 leaves fresh basil or 2 tbsp. dried
2 c. tomato puree
1/2 lb. fresh chopped spinach leaves
1/2 c. chopped parsley
3/4 c. grated Romano or Parmesan cheese
3/4 c. oil

Process all of the above in a blender or food processor until it is a puree. Heat gently and toss with hot pasta.
