CHOCOLATE-DIPPED COCONUT CANDIES 
1 c. potatoes puree, sweet potatoes
1 lb. box confectioners' sugar
4 c. shredded coconut
2 tsp. vanilla extract
1/8 tsp. salt
5 sqs. (1 oz. each) unsweetened chocolate, melted

Combine potatoes and sugar. Stir vanilla and coconut and salt. Freeze 30 minutes until firm. Shape candies into 1 inch squares. Place on waxed paper and freeze 30 minutes until firm.
