CHOCOLATE COCONUT CANDIES 
3/4 c. mashed potatoes (instant)
1 lb. flaked coconut
1 lb. confectioners' sugar
1 tsp. almond extract

Mix the above ingredients. Roll into small balls. Put in refrigerator 1/2-1 hour. Dip in chocolate coating: 6 ounce semi-sweet chocolate chips and almost 1/2 of a paraffin slab. Melt coating in double boiler.
