ENGLISH TOFFEE COOKIES 
1 c. butter
1 egg yolk
1 1/4 c. chopped nuts (reserve 1/2 to 3/4 c. for topping)
1 egg white, slightly beaten
1 c. sugar
2 c. flour
1 tsp. vanilla
1 tsp. cinnamon

Mix all ingredients except egg white. Place in greased jelly roll pan and pat to 1/4 inch thickness. Brush with egg white and sprinkle nuts over top. Bake in 300-325 degrees until brown. Cut into squares while hot.
