STUFFED BAKED POTATOES 
8 sm. or med. baking potatoes
16 oz. sour cream
5 chopped green onions
10 fried & chopped strips of bacon
1 c. shredded cheddar cheese
1 stick butter, melted

Bake potatoes in microwave for 15 minutes. When done, cut in half and scoop out the insides leaving only the brown shell. Put the middles in a bowl and add all the remaining ingredients. Mix with a potato masher. Spoon batter into the potato shells. Place on a dinner plate. Sprinkle with shredded cheese. Put back in microwave for 3 minutes to melt cheese and reheat the potato. Serve. Yield: 16 potatoes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
