COOKIES FROM CAKE MIX
1 (2 layer) pkg. cake mix (any flavor, pudding cakes are okay)
2 lg. eggs
1/3 c. oil
1 tsp. vanilla or other flavor to match cake mix

Lightly beat together eggs, oil and extract in mixing bowl. Add half the cake mix and beat by hand until smooth. Stir in remaining mix until well blended. Drop by teaspoons about 2 inches apart onto ungreased baking sheet. Bake at 375 degrees for 10 to 12 minutes or until bottoms begin to brown. Centers will be soft. Let cookies cool briefly, then transfer to racks. Makes about 4 dozen.

To make chocolate chip cookies, add 1 (6 oz.) package semi-sweet morsels to dough when adding second half of cake mix. For other additions, nuts, raisins, coconut, etc., use 1/2 to 3/4 cup and also add when stirring in second half cake mix. Makes about 4 1/2 dozen.
