FILLET OF FISH AMANDINE 
1/2 c. slivered almonds
1/4 c. butter
1 lb. fish fillets
1 tbsp. lemon juice
1 tsp. chopped parsley
1/2 tsp. salt
1/4 tsp. dill weed
1/8 tsp. pepper

Place almonds in butter in 8 inch glass or baking dish. Rinse fillets in cool water and pat dry. At 350 degrees, add fillets to dish, turning to coat with butter. Roll up fillets and place on almonds. Sprinkle with lemon juice, parsley, salt, dill weed and pepper. Cook for 20 minutes.

Spoon almonds and sauce on fillets and serve. Garnish with lemon wedges, parsley sprigs or paprika. Makes 2 to 3 servings.
